If you’re wondering, “What are garlic chives?”
Also known as Chinese chives or Asian chives, they’re an herb in the onion family that have a garlic flavor. They are much more flavorful compared to regular chives and are used often in Chinese cooking.
Although they can be eaten raw, I personally think they’re much better lightly cooked in simple stir-fries, and paired with eggs, shrimp, or pork.

The simplest out of the bunch, adding garlic chives to Cantonese scrambled eggs is one of the easiest ways to level them up!

Inspired by the popular chive and shrimp dumplings (gao choy gao) at dim sum, these versions with rice paper are perfectly crispy and slightly chewy. I might even like them better than the traditional version 🤫
